Honeybell Marmalade Glazed Chicken Thighs

Juicy roasted chicken thighs are coated in a sticky glaze made with Davidson of Dundee Honeybell Marmalade, Dijon mustard, soy sauce, garlic and rosemary. As the chicken roasts, the marmalade caramelizes into a sweet and savory citrus glaze. It's an easy weeknight dinner that showcases just how versatile Florida marmalade can be.

Ingredients
- 6 bone-in, skin-on chicken thighs
- ½ cup Davidson of Dundee Honeybell Marmalade
- 2 tablespoons soy sauce
- 1 tablespoon Dijon mustard
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 teaspoon fresh rosemary, chopped (or ½ teaspoon dried)
- Salt and pepper to taste

Zest of ½ Honeybell or orange (optional)
Directions
- Preheat oven to 400°F.
- In a small bowl, whisk together the Davidson of Dundee Honeybell Marmalade, soy sauce, Dijon mustard, olive oil, garlic, rosemary and citrus zest.
- Pat the chicken thighs dry and season lightly with salt and pepper.
- Arrange chicken thighs skin-side up in a baking dish or on a parchment-lined baking sheet.
- Brush the chicken generously with the Honeybell Marmalade glaze, reserving some glaze for later.
- Roast for approximately 35–40 minutes, or until the chicken reaches an internal temperature of at least 165°F. Brush with additional glaze during cooking.
- For an extra sticky, caramelized finish, brush with a final layer of glaze during the last few minutes of cooking.

Remove from the oven, allow the chicken to rest for several minutes and serve.
